SPINACH QUICHE 
1 unbaked 10-inch pie crust
1 (10 oz.) pkg. frozen, chopped spinach
1 tbsp. butter
1 med. onion, chopped
1/2 lb. mushrooms, sliced
1/2 lb. imported ham, chopped
1/2 lb. Swiss cheese, shredded
1 pt. heavy cream
3 eggs, beaten
Salt and pepper to taste

Cook and drain spinach. Saute onion in butter until soft. In large bowl, combine cooked onion, mushrooms, ham, and cheese. Add spinach. Beat eggs, cream, salt, and pepper and stir into bowl. Pour mixture into prepared crust and bake 15 minutes at 450 degrees. Lower oven to 350 degrees and bake 55 minutes longer or until knife inserted in center comes out clean.
