2 (8 oz.) pkgs. cream cheese 2/3 c. powdered sugar 3 tbsp. + 1/3 c. Kahlua 1 1/2 tsp. vanilla 3 (1 oz.) sq. semi-sweet chocolate, grated 2 tsp. instant espresso coffee powder 2 (3-4 1/2 oz.) pkgs. lady fingers (in a pinch I used Twinkies sliced 2 times) In large bowl with wire whisk beat cheese with sugar, Kahlua and vanilla. Fold in 2/3 grated chocolate and 1 cup of whipped cream. Separate ladyfingers in half or Twinkies. Layer ladyfingers in bottom of 2 1/2 quart bowl. Brush with espresso and 1/3 cup Kahlua mixture (saving some for other layers). Top with cheese mixture and more ladyfingers. Press ladyfingers down into cheese mixture. Repeat 2 more times. Sprinkle remaining chocolate on to and dot with remaining whipped cream. Refrigerate until chilled (2 hours). |
