CHICKEN GUMBO | |
2 c. sliced okra 1/3 c. fat or bacon drippings 2/3 c. chopped green onions and tops 3 cloves garlic, finely chopped 1 1/2 tsp. salt 2 c. chopped celery 2 tsp. black pepper 1 chicken, cooked, diced and deboned 1 can stewed tomatoes 2 to 3 c. water 2 whole bay leaves Sauté okra in fat, stirring constantly about 10 minutes or until okra appears dry. Add onions, celery, garlic, salt, pepper and chicken to okra mixture. Add water, tomatoes and bay leaves. Cover and simmer 20 minutes. |
