HAZELNUT MUFFINS 
1 c. flour
2/3 c. chopped or ground hazel nuts, toasted
1/4 c. sugar
2 tsp. baking powder
1/2 tsp. salt
3/4 c. milk
1/3 c. oil
1 beaten egg

Mix flour and nuts, sugar, baking powder and salt together. Make a well in the center. Combine milk, oil and egg; add all at once to dry ingredients. Stir just until moistened. Fill muffin cups (greased or paper lined) 2/3 full. Sprinkle with 1/4 cup chopped nuts (optional). Bake at 400 degrees for 18-20 minutes. Yield 12 muffins.
