ZUCCHINI CASSEROLE 
6 c. cut up zucchini
1 med. onion, chopped
1/2-1 stick butter
1 can cream of chicken soup
1 c. milk
1 c. Minute Rice, uncooked
1 c. shredded cheese

Saute zucchini and butter. Add soup, milk, rice and cheese. Stir until cheese melts. Bake in casserole dish for 1 hour at 350 degrees.
