ZUCCHINI BREAD | |
1 1/2 c. sugar 2 c. zucchini, grated and peeled 1 c. oil 3 eggs 1 tsp. vanilla 1/2 c. nuts, chopped 3 c. flour 1 tsp. salt 1/4 tsp. baking powder 1 tsp. baking soda 3 tsp. cinnamon 1/2 c. raisins Beat eggs until light and foamy, add oil and sugar, grated zucchini and vanilla. Mix slightly, but well. Sift together, add flour, salt, soda, baking powder and cinnamon. Mix until blended. Add nuts and raisins. Blend. Bake at 325 degrees for 1 hour. Makes 2 small loaves, 8 x 4 inches. |
