COCONUT LAYER CAKE 
2 1/2 c. flour
2 c. sugar
2 1/2 tsp. baking powder
1 tsp. salt
1 c. milk
1/2 c. cold water
1/2 tsp. vanilla
4 egg whites
1/2 c. shortening
1/4 c. butter, softened

Preheat oven to 350 degrees. Sift together flour, baking powder and salt, set aside. Combine milk, water, vanilla, set aside. Beat egg white, stir in 1/4 cup of sugar until soft peaks form; set aside.

Combine shortening, butter and rest of sugar in large bowl. Beat until light. Beat in dry ingredients and milk mixture. Fold in egg whites.

Make coconut pudding; let cool; put in between layers. Then use Cool Whip for frosting, sprinkle coconut on top of frosting.
