SPINACH BROWNIES | |
1 c. unbleached all purpose flour 1/2 tsp. salt 1 tsp. baking powder 1 c. non-fat milk 2 tbsp. corn oil butter, melted 1/2 c. liquid egg substitute 1 c. onion, minced 6 oz. 20% fat-reduced cheddar cheese 1 (10 oz.) pkg. frozen spinach cooked and squeezed or 3/4 lb. fresh spinach chopped, steamed 2 minutes and squeezed Mix together flour, salt, baking powder, milk, butter, egg substitute, onion, cheese, and spinach. Place in a 9 inch square pan sprayed with non-stick vegetable coating. Bake at 350 degrees for 30 minutes. Cut into squares and serve. May be baked a day ahead and reheated. Makes 8 servings. |
