CHRISTMAS PICKLES 
1 gal. cucumbers (lg. or ripe)

Remove seeds, peel and slice 1/4 inch thick.

Add 1 cup pickling lime with enough water to cover. Let set 24 hours. Rinse well. Let set in clean cold water for 3 hours. Rinse again.

Add: 1 tsp. alum 1 c. vinegar Enough water to cover cucumbers

Simmer for 2 hours. Drain.

While cucumbers simmer, make syrup of: 2 c. water 7 c. sugar 1 c. red hot cinnamon candies 4 sticks cinnamon

Cook until candies dissolve. Pour over drained cucumbers. Let stand overnight. Remove cinnamon sticks. Put in jars. Process for 10 minutes in hot water bath to seal jars.
