PERDUE HENS WITH SAUSAGES AND
PEPPERS
 
2 cornish game hens
Salt and ground pepper
2 hot Italian sausages, cut into 3/4 inch slices
1 clove garlic, minced
1 med. onion, sliced
1 green pepper, sliced
1 sweet red pepper, sliced
1 (8 oz.) can tomatoes (undrained)
3/4 tsp. oregano

Cut hens in half lengthwise and remove back bones. Season well with salt and pepper. Place in shallow roasting pan. Brown sausages in skillet; pour off fat. Stir in garlic, onions, and peppers; saute 2 minutes. Add tomatoes and oregano. Bring to a simmer; pour over hens. Bake at 375 degrees for 45 to 55 minutes, or until hens are tender, basting occasionally.

Serve with buttered linguine topped with fresh grated Parmesan cheese, chopped parsley, and a few tablespoons of heavy cream.
