SCONES 
2 c. flour
1 tbsp. sugar
1/2 tsp. salt
4 tsp. baking powder
4 tbsp. shortening
1/2 c. milk
1 egg, beaten

Preheat oven to 400 degrees. Put flour, sugar, salt and baking powder in a mixing bowl. Add the shortening and work everything with fingers until it is crumbly.

In another bowl blend milk and egg, then combine with flour mixture. Turn out dough and gently work in 1/4 cup flour. Lift, place into buttered baking pan or pie plate. Pat 1/2 inch thick and mark into wedges.

Pour on 1 tablespoon melted butter. Some cooks sprinkle on a little sugar to make a slightly sweet crust. Bake 15 minutes, remove. Separate wedges to serve hot. Scones are often eaten with "Clotted Cream" as well as fruit preserves.
