RHUBARB COFFEE CAKE | |
1 c. flour 1 tsp. baking powder 1/4 tsp. salt 2 tbsp. sugar 1/4 c. butter 1 tbsp. milk 1 egg 3 c. cut-up rhubarb 1/2 pkg. strawberry gelatin TOPPING: 1/2 c. flour 1/2 tsp. cinnamon 1/2 c. sugar 1/4 c. butter Mix together flour, sugar, baking powder and salt. Cut in butter. Blend in milk and egg. Press mixture into well-greased 8-inch square pan. Cover with rhubarb. Sprinkle gelatin evenly over top. Sprinkle with topping. Bake at 375 degrees for 40 minutes. TOPPING: Mix together flour, cinnamon, sugar and butter. |
