AFRICAN SWEET POTATO SALAD 
4 med. sweet potatoes, boiled
1/4 c. peanut oil
2 tbsp. lemon juice
1/4 tsp. pepper
1/2 c. celery, chopped
1/2 c. green pepper, chopped
1/2 c. green onion, thinly sliced
Parsley

Cut potatoes in cubes. Place in glass bowl. Mix oil, lemon juice and pepper. Pour over potatoes. Cover and refrigerate at least 4 hours. Stir in celery, green pepper and onion. Garnish with parsley. Serves 6.
