FLOUNDER FRANCHESE 
Lightly dust flounder in flour then dip into egg and water mixture. Quickly saute' in pan with butter and olive oil. Pat dry.

Saute' flounder in butter and lemon. Remove flounder (to plate). Make Roux (melt butter and add same amount of flour), add 2 parts chicken broth and 1 part beef broth and wine. Mix then pour over flounder.
