SAUSAGE STUFFED MUSHROOMS 
1 lb. seasoned pork sausage
16 lb. white mushrooms, cleaned
Salt & pepper to taste
Chopped parsley for garnish

Place sausage in medium bowl. Remove stems from mushrooms. Finely chop stems. Mix with sausage. Place mushroom caps on baking pan with top sides down. Divide sausage mixture into 16 portions. Shape into balls. Place 1 ball into each mushroom cap. Sprinkle lightly with salt and pepper. Bake at 400 degrees for 15 to 20 minutes until sausage is browned and cooked through.
