FANDANGO 
1 lb. lean ground beef
8 oz. can sliced mushrooms, drained
1 can cream of mushroom soup
1 c. sour cream
1 tbsp. uncooked rice
6 oz. pkg. Mozzarella cheese
2 (10 oz.) pkgs. frozen chopped spinach, thawed & drained well
1/2 c. chopped onion
1/4 tsp. pepper
2 cloves garlic, minced
1 tsp. oregano
3 tbsp. melted butter
1/2 tsp. salt

Saute the ground beef, onion, mushrooms, garlic and oregano in melted butter. Drain well and crumble cooked meat into small pieces. Add salt, pepper and seasonings and remaining ingredients (except cheese) and spoon into a 2 quart casserole. Bake uncovered at 350 degrees for 35 to 40 minutes. The last 15 minutes, put sliced cheese on top.
