3 LAYER COOKIES 
2 1/2 c. flour
1 1/2 c. sugar
1 c. butter, softened
1 egg
1 1/2 tsp. baking powder
1 tsp. vanilla
1/2 tsp. salt
1/2 tsp. almond extract
Red food color
1 sq. unsweetened chocolate
1/2 c. chopped walnuts

Combine first 7 ingredients with mixer for 3 minutes. Divide dough into 3 small bowls. Add almond extract and 5 drops red food dye to one bowl. Stir until mixed thoroughly. Melt chocolate and add to second bowl, stirring well. Mix nuts with remaining third bowl.

Line a loaf pan with waxed paper and spread almond dough evenly. Then spread walnut dough and top layer chocolate. Cover with waxed paper and refrigerate 4 hours or until firm.

Preheat oven to 350 degrees. Turn out chilled dough and peel wax paper. Cut dough lengthwise in half. Slice each half into 1/4 inch slices. Bake on ungreased cookie sheet 10-12 minutes until light brown.
