BANANA - PRALINE MUFFINS 
3 tbsp. brown sugar
1 tbsp. sour cream
3 sm. bananas
1/2 c. granulated sugar
1 1/2 c. packaged pancake mix
1/3 c. broken pecans
1 egg, slightly beaten
1/4 c. cooking oil

In small bowl, stir brown sugar. Add sour cream. Stir in pecans. Mash bananas. In a medium bowl, mix egg, sugar, oil and mashed bananas. Add pancake mix, stir until moistened. Grease muffin cups; fill 2/3 full. Drop 1 teaspoon pecan mixture on top pressing down into batter slightly. Bake at 400 degrees 12 to 15 minutes until golden brown.
