MISS ERICKSON'S FAMOUS CANDIED
APPLES
 
2 c. sugar
1/2 c. light corn syrup
1/4 tsp. cinnamon or mint flavoring
6 skewer sticks
6 paper baking cups
3/4 c. water
1/8 tsp. salt
1/4 tsp. food coloring
6 apples

Pour sugar, syrup, water and salt into a saucepan and place over a medium heat, stirring constantly until mixture comes to a boil. Continue cooking without stirring until syrup forms a hard ball when a bit is dropped into cold water. Remove saucepan from stove and place in a pan of very hot water. Add coloring and flavoring, stirring slightly. Stick a skewer into each apple at the stem end and quickly dip the apple into the syrup, swirling it several times. Place each candied apples in a paper cup or on wax paper until it hardens.
