BEEF STROGANOFF 
2 1/2 lb. boneless sirloin
2 tbsp. butter
1 onion, sliced
2 tbsp. flour
1 can beef broth
3/4 tsp. salt
1/4 tsp. pepper
2 tbsp. tomato paste
3 tbsp. sherry
1/2 tsp. dry mustard
1/2 pt. sour cream

Cook meat in 1 tablespoon butter until brown. Add onion. Melt remaining butter in same pan; blend in flour. Add next 6 ingredients and simmer 1 hour. Cool. Add sour cream and warm before serving or bake at 350 degrees for 45 minutes at a later time. Serves 4-6.
