CHICKEN ALMOND SALAD 
3 c. cooked, diced chicken
1 c. diced celery
3 tbsp. lemon juice
1 c. diced pineapple, well drained
1 c. seedless grapes, halved
1 c. toasted almonds, slivered
1 c. mayonnaise
1 tsp. dry mustard
Salt & pepper to taste
1/4 c. light cream
Lettuce (as garnish)

Combine chicken, celery and lemon juice; chill for 1 hour. Add drained pineapple, grapes and almonds. Combine mayonnaise, mustard, salt, pepper and cream. Add to chicken mixture; toss. Line a bowl with lettuce; add chicken salad.

Serves 8.
