OKRA PILAF 
3 slices bacon, diced
2 tsp. vegetable oil
2 c. okra, thinly sliced
1 c. green pepper, chopped
1 c. onion, chopped
1 c. uncooked regular rice
2 c. chicken broth
1 tsp. salt
1 (16 oz.) can whole tomatoes, drained & chopped

Cook bacon in a Dutch oven over medium heat until limp. Add oil and okra; saute until lightly browned. Add green pepper and onion; cook, stirring constantly, until tender. Stir rice, chicken broth and salt into vegetable mixture. Bring to a boil, stirring once. Cover, reduce heat, and simmer 20 minutes or until liquid is absorbed. Add tomatoes, stirring lightly. Yield: 6 to 8 servings.
