SUMMER SAUSAGE 
5 lbs. hamburger
10 tsp. Morton tender quick salt
2 1/2 tsp. garlic salt
2 1/2 tsp. pepper
2 1/2 tsp. mustard seed
3 tsp. liquid smoke

Mix all ingredients together. (Leave ground beef uncooked.) Refrigerate for 3 days. Mix again and divide into 6-8 parts. Shape each part into a log. Place on a broiler pan and bake at 180 degrees for 8-10 hours. Wrap in plastic or foil. Serve with crackers.
