1 3/4 c. flour 2 tsp. baking powder 1/2 tsp. salt 1/2 tsp. cinnamon 3/4 c. orange juice 1/2 tsp. grated orange rind 1/2 c. plus 1 tbsp. vegetable oil 1 egg 1/2 c. chopped walnuts 1/2 c. chopped raisins Preheat oven to 375 degrees. Combine flour, baking powder, salt and cinnamon. Add remaining ingredients; mix well. Drop by teaspoons on ungreased cookie sheet to make 32 to 34 cookies. Bake about 15 to 20 minutes. When done remove cookies from pan and cool. For variation add 1/4 teaspoon ground cloves for spicy taste. Diabetic exchanges per 2 cookie servings: 1 bread, 1 1/2 fat. Calories 144. |
