COCONUT CUSTARD PIE 
4 slightly beaten eggs
1/2 c. sugar
1/4 tsp. salt
1/2 tsp. vanilla
2 1/2 c. milk, scalded
1/2 c. flaked coconut
1 (9") unbaked pie shell

Blend beaten eggs, sugar, salt and vanilla. Gradually stir in scalded milk. Pour into pastry shell and sprinkle coconut on top of pie. Bake in a 350 degree oven for 35-40 minutes on until knife inserted halfway comes out clean. Cool on rack then chill.
