PIMENTO TOPPED STEAMED BROCCOLI 
4 c. broccoli spears
2 1/2 tsp. lemon juice
Dash each salt & pepper
3 tbsp. diced pimentos

Pour about 1 inch of water into medium saucepan, or just enough to leave a 1/2 inch space between steamer insert and water. Bring water to a boil. Place broccoli in steamer insert and carefully place insert in saucepan. Cover tightly and reduce heat to medium. Water should continue to bubble.

Steam about 10 minutes or until tender. Transfer broccoli to serving dish, sprinkle with lemon juice, salt and pepper. Garnish with pimentos. (Measure 1 cup per serving.) Single serving = 1 cup vegetable.
