BANANA YOGURT CAKE 
2 c. flour
1 c. sugar
1 tsp. baking soda
3/4 tsp. salt
1 tsp. finely shaved lemon peel
1 tsp. vanilla
3 egg whites
3/4 c. sugar
2/3 c. plain yogurt
2/3 c. mashed ripe bananas
2/3 c. oil

Beat egg whites (and sugar) on high speed until stiff peaks form. Stir yogurt mixture into flour mixture until moistened. Fold in egg whites. Pour batter into a greased and floured 9 x 13 inch pan. Bake 40 minutes or until toothpick comes out clean - 350 degrees.
