BEEF WITH OYSTER SAUCE 
1 lb. lean flank steak
15 pieces green onions
15 slices fresh ginger, each quartered
1/2 tbsp. baking soda to marinate beef
1 tbsp. sugar
3 tbsp. water
2 tbsp. oil
2 tbsp. oyster sauce
1 tbsp. water
1 tbsp. sugar
1/2 tbsp. cornstarch
1/2 tbsp. sesame oil
4 c. oil
1/2 lb. green vegetable or your choice
1/2 tbsp. salt
1 tbsp. sugar

1. Slice the beef very thin into 1 inch squares. Put in a bowl and marinate for 1/2 hour at least (longer is better). Then add in 2 tablespoons oil and mix well.

2. Boil the green vegetable for 2 minutes. Remove from pan and stir fry with 2 tablespoons oil. Season with wine, salt and sugar, lay on plate.

3. Heat 4 cups of oil in a frying pan (about 300 degrees). Add the beef and fry until it turns light brown, about 10 seconds. Remove beef and drain off oil from pan.

4. Use another 2 tablespoons oil to fry the green onions and ginger. Add the beef and stir quickly over high heat. Add the seasoning sauce ingredients and stir until thickened and heated through. Pour over the green vegetable and serve.
