MAYONNAISE 
2 tbsp. lemon juice
1 tsp. salt
1 1/2 tsp. prepared mustard
1 tsp. sugar
2 egg yolks
1 pt. chilled salad oil

12 drops Tabasco
3 tbsp. capers

Place lemon juice, salt, mustard, and sugar in an electric mixer and mix on medium high speed until blended. Add egg yolks, one at a time. Add oil gradually by droplets until mayonnaise thickens, then add oil faster. Makes about 2 1/2 cups.
