2 sticks butter Flour (for coating fish) Lemon juice Salt (optional) Pepper (optional) 4 lg. salmon steaks, fillets 10 oz. mild cheddar cheese 2 c. sour cream 1 c. sauteed mushrooms Roll salmon in flour. Melt 1 stick of butter and add lemon juice to taste. Pour butter over salmon in large baking dish. Bake at 350 degrees until salmon is flaky (about 30 minutes). Remove from oven. Mix the second stick of butter and sour cream, heat over low flame and set aside. Shred cheddar cheese. Pour 1/2 of the sour cream mixture over salmon and top with cheese and sauteed mushrooms. Place under broiler until cheese is bubbly. Serve with remaining sour cream mixture as sauce for dipping. |
