GINGERBREAD 
1 1/4 c. sifted flour
3/4 tsp. baking soda
1/2 tsp. ground ginger
1/2 c. molasses
1/4 c. butter
1 tsp. grated orange rind

Sift together flour, baking soda, and ginger; set aside. In medium saucepan, heat molasses and butter to boiling; cool slightly. Add flour mixture to mixture in pan along with orange rind; mix well. Cover and chill (right in pan) about an hour.

Preheat oven to 350 degrees. Roll dough out on unfloured counter top or cutting board, as thin as possible. Cut with cookie cutters; use spatula to lift cookies to greased cookie sheets. Bake 6-7 minutes, until edges are crisp but not too brown.

Makes 3-5 dozen, depending on size of cutters and thickness of dough.
