BROCCOLI AND CHEESE 
1 (20 oz.) bag frozen broccoli
1 stick butter, halved
8 oz. Velveeta cheese
32 Ritz crackers

Cook the broccoli, drain. Quickly add cubed cheese, 1/2 of sliced butter. Stir and pour into 1 1/2-quart casserole dish. Melt other half of butter and mix with crushed Ritz crackers. Spread over broccoli. Bake at 325 degrees for 20 to 25 minutes.

VARIATION: Add chopped, cooked chicken.
