OZARK HONEY OATMEAL COOKIES 
1/2 c. shortening
1 1/4 c. sugar
2 eggs
1/3 c. honey
1 3/4 c. self-rising flour
2 c. quick cooking oats
1 c. flaked coconut

Preheat oven to 375 degrees. Mix shortening, sugar, eggs and honey thoroughly. Stir in remaining ingredients. Drop dough in rounded teaspoonfuls 2 inches apart on ungreased baking sheet. Flatten with bottom of glass dipped in sugar. Bake 8 to 10 minutes or until golden brown. Immediately remove from baking sheet and let cool on wax paper.

Makes 5 dozen cookies.
