ARNOLD'S FAMILY RESTAURANT
CRANBERRY SALAD
 
1 lb. cranberries
1 (8 1/4 oz.) can crushed pineapple, drained
1 1/2 c. sugar
1 c. whipping cream
Pinch salt
1/2 (1 lb.) pkg. miniature marshmallows

Rinse and hull cranberries if necessary. Put through coarse blade of grinder or blend in blender. Combine with drained pineapple and sugar and mix well. Let stand several hours or overnight to blend flavors.

When ready to assemble, whip the cream with salt until firm. Fold in marshmallows. Fold whipped cream mixture into cranberry mixture. Serve as salad. Makes 6 servings.
