MANGO-BANANA PIE | |
1 baked pie shell 2 or 3 lg. mangoes, depending upon size Cinnamon and honey, to taste Cornstarch 3 tbsp. apple juice 5 bananas, sliced Whipped cream Prepare the pie shell. Make sure your fruit is very ripe. The mangoes should be sweet and orange. (The Spiral currently uses Haitian mangoes.) Slice mangoes and cook with their own juice in a pot over medium heat. Add a touch of cinnamon and honey, to taste. Add enough cornstarch to thicken. Add apple juice and blend well. (Other compatible fruit juice can be substituted for the apple juice.) The longer the mangoes are cooked the thicker the mixture will be. Remove from heat and cool. Mix with sliced bananas in a separate bowl. Fold in baked pie shell. Chill and serve topped with whipped cream. Makes 1 pie. |
