MICROWAVE CARAMEL CORN 
18 c. air popped popcorn
1 c. packed brown sugar
1/4 c. light corn syrup
1 stick butter
1/2 tsp. salt
1 tsp. vanilla
1/2 tsp. baking soda
1 c. unsalted nuts (optional)

Place popped corn in large paper bag. Combine in large glass bowl the sugar, butter, corn syrup and salt. Microwave on full power 2-4 minutes until mixture bubbles. Now boil 3 minutes, stirring after each minute. Add soda and vanilla, stir well. This will foam up.

Pour this over popcorn in bag. Fold down and shake well. Microwave on full power 1 minute. Shake and repeat full power 1 minute and shake. Microwave on full power 30 seconds, shake and repeat. Microwave again on full power 30 seconds and shake. Pour out to cool. Store in airtight container. Don't deviate from recipe.

Since microwave ovens vary in power, you may need to adjust your cooking time.
