LEMON CHICKEN WITH MUSHROOMS
(MICROWAVE)
 
1 lemon thinly sliced
4 chicken breasts, skinned and boned
4 tbsp. butter, melted
1/4 c. lemon juice
1 tsp. lemon pepper seasoning
1 tbsp. chopped parsley flakes
8 oz. fresh mushrooms, sliced

Arrange lemon slices in the bottom of a shallow microwaveable dish. Place chicken breasts on top of lemons.

Combine melted butter and lemon juice and pour over chicken. Sprinkle evenly with lemon pepper and parsley (and salt if desired). Cover with waxed paper and microwave at HIGH for 5 1/2 minutes. Sprinkle mushrooms around chicken, cover with waxed paper and cook on HIGH for 5 1/2 minutes or until cooked through. Let stand 5 minutes.

Since microwave ovens vary in power, you may need to adjust your cooking time.
