PITA BREAD 
1 pkg. dry yeast
3 1/4 to 4 c. flour
1 1/4 c. warm water
2 tbsp. oil
1 tsp. salt
1/4 tsp. sugar

In electric mixer, stir yeast and 1 1/2 cups flour. Stir together water, oil, salt and sugar. Add to dry mixture and beat on low speed for 3 1/2 minutes. Stir in enough remaining flour to form dough. Knead 5 minutes. Cover and let rise 45 minutes. Punch down and divide into 12 parts. Shape into balls and let rest 10 minutes. Roll out each to 5 inches diameter. Place on cookie sheet. Cover and let rise 30 minutes. Bake in 400 degree oven 9 to 10 minutes. Remove from baking sheet and immediately wrap in foil to cool. Makes 12.
