CRUNCHY PEANUT BUTTER COOKIES 
1/2 c. granulated sugar
1/2 c. firmly packed light brown sugar
1/2 tsp. salt
1/2 c. butter
1/2 c. crunchy peanut butter
1 egg
1/2 tsp. vanilla extract
1 c. sifted all-purpose flour
1/2 tsp. baking soda

Cream sugars, salt, butter, and peanut butter thoroughly in large mixing bowl. Beat egg and extract into creamed mixture until light and fluffy. Sift together flour and soda. Blend into creamed ingredients gradually. Form into 1 inch balls and place 2 inches apart on ungreased cookie sheets. With floured fork, make a criss- cross design to flatten cookies. Bake in hot oven (400 degrees) for 6 to 7 minutes or until light brown around edges. Yield: 6 dozen cookies. Store in air-tight container.
