POLISH FRIED CHICKEN 
2 c. all-purpose flour
1 tsp. salt
1 tsp. pepper
2 eggs
Puritan oil
5 lb. chicken

In a large mixing bowl with cover (or large zip lock bag) combine flour, salt and pepper. Preheat oven to 250 degrees. Beat eggs until blended. Remove skin from chicken pieces. Dip chicken in eggs and drop into flour mixture individually. Shake chicken pieces to coat thoroughly and drop into oil heated to 350 degrees.

Allow chicken to brown on each side for approximately 10 minutes. Place chicken on broiler pan and allow to finish cooking in oven, approximately 30 minutes. Oils and fats drain into broiler pan and chicken is moist and delicious!
