PEA POD SALAD 
1 lb. fresh Chinese pea pods
1/4 c. diced onions
2/3 c. diced celery
Fresh baby shrimp
1/4 c. diced red pepper
1/2 c. mayonnaise
1/2 tsp. ginger
1/4 tsp. salt
1/4 tsp. thyme
1 tsp. curry
1/2 c. cashews

Mix mayonnaise with the other seasonings. Set aside. Prepare vegetables and shrimp. Add just enough mayonnaise mixture to lightly coat the vegetables. Add cashews before serving. (Curry may be adjusted to taste.)
