VEGGIE BEAN POT 
2 tbsp. oil
1 c. diced zucchini
1/2 c. chopped green pepper
1/2 c. chopped onion
1/4 lb. ground beef
2 tbsp. tomato paste
1/2 tsp. salt
1/2 tsp. cumin
1/4 tsp. pepper

Heat oil in a large skillet. Add zucchini, green pepper and onion and saute 5 minutes until tender. Push vegetables to one side; add ground beef and brown. Stir in tomato paste, salt, cumin, pepper and cinnamon. Cook 3 minutes, stirring occasionally. Transfer vegetable meat mixture to a one quart oven proof casserole. Stir in pork and beans, cover and bake 15 minutes at 375 degrees. Serves 4.
