EMERALD ISLE MOLD 
1 (3 oz.) pkg. lime flavored gelatin
1 c. boiling water
3/4 c. juice from grapefruit
1 (8 oz.) pkg. Philadelphia cream cheese

1 (3 oz.) pkg. lime gelatin
1 c. boiling water
1 c. gingerale
1 c. drained grapefruit sections cut in half
1 c. diced apples, optional
1/4 c. chopped nuts

Dissolve 1 package lime gelatin in boiling water; add grapefruit juice. Gradually add to softened cream cheese, mixing until well blended, pour into 1 1/2 quart mold. Chill until firm.

Dissolve remaining package lime gelatin in boiling water, add gingerale. Chill until slightly thickened, fold in fruit and nuts. Pour over molded gelatin layer. Chill until firm. Servings 6-8.
