LEMON CHIX & VEGETABLES 
1 lemon
4 chicken breast cutlets
2 tbsp. oil
Garlic clove
2 tbsp. water
1 tsp. tarragon leaves
1 (16 oz.) pkg. Birds Eye Farm cauliflower, zucchini & peppers
Salt & pepper

Reserve juice from 1/2 lemon. Slice other 1/2 into 4 slices. Brown chicken and lemon slices in hot oil. Discard lemon. Add garlic. Cook and stir 30 seconds. Add lemon juice and remaining ingredients. Bring to boil. Cover, reduce heat and simmer until vegetables are done.
