SPINACH PIE 
6 pkg. 10 oz. chopped spinach
2 lbs. Feta cheese, cubed
2 lbs. Monterey Jack cheese, shredded
8 slices American cheese, cubed
1 lemon
3 eggs
8 tbsp. flour
1 pkg. fillo dough
Squeeze butter

Cook spinach as directed on package; drain well. Put in large bowl and squeeze juice of lemon over spinach and mix well. Stir in eggs, then flour, mix well. Add cheese and mix well. Lay out clean dish cloth. Take one sheet of fillo dough and spread butter over entire sheet, continue procedure until 1/2 of package of fillo dough is gone. Place 1/2 of spinach mixture along edge of dough then roll dough. Cover outside layer with butter and cut 2 slits on top. Repeat procedure for second pie. Bake at 350 degrees for approximately 30 to 40 minutes until golden brown. Makes 2 pies.
