MINI CHEESECAKES 
2 (8 oz.) pkg. cream cheese
3/4 c. sugar
2 eggs
1 tbsp. lemon juice
1 tsp. vanilla
Vanilla wafers
Pie filling

Put vanilla wafers in bottom of tin foil muffin cups. Mix cheese, eggs, sugar, lemon juice, and vanilla, beating very well. Pour into muffin cups. Bake at 350 degrees for 20 minutes. Cool; centers will fall. Fill centers with pie filling (cherry is recommended). Yields: 18 cakes.
