LEMONY APPLE CHUTNEY | |
1/2 cup regular raisins 1/2 cup golden raisins 1/2 cup dry white wine or sherry 6 medium-size Red Delicious or Rome apples, peeled, cored, quartered and chopped fine 1/2 cup sugar 1/2 cup (1 stick) butter 1 tbsp. lemon juice 1/2 tsp. nutmeg 1 tsp. cinnamon Soak regular raisins in wine for an hour or so. Drain and set aside. Combine apples, sugar, butter, drained wine, lemon juice, nutmeg and cinnamon in a large saucepan. Place over medium heat. Bring to boil, stirring constantly. Reduce heat and simmer for 30 to 35 minutes until thickened. Stir in raisins and cook 1 more minute until heated through. Serve with pork, chicken, turkey or ham. Yields 3 1/2 cups. |
