LUCIA GINGER SNAPS (SWEDISH) 
1-1/2 cups heavy cream
2-1/2 cups brown sugar
1-1/4 cups dark syrup
1 tbsp. ginger
1 tbsp. grated lemon rind
2 tbsp. baking soda
9 cups flour

Whip 1-1/2 cups heavy cream, add 2-1/2 cups brown sugar, 1-1/4 cups dark syrup, 1 tbsp. ginger, 1 tbsp. grated lemon rind, 2 tbsp. baking soda, and stir 10 minutes.

Add 9 cups flour, work until smooth. Cover, leave in cool place overnight.

Turn onto floured baking board, roll out thin. Cut into Santa Claus shapes. Brush with water.

Bake on greased cookie sheet at 250°F. for 15 minutes. Let cool on cookie sheet.
