PEAR OR PEACH RELISH 
1 peck pears or peaches, chopped, peeled and cored
6 lg. onions, chopped
6 sweet green peppers, 6 sweet red peppers, chopped
1 bunch celery, chopped and cleaned

Mix all up and then add:

3 c. sugar
1 tbsp. allspice
1 tbsp. salt
5 c. vinegar

Mix and let stand overnight. Heat to boil - remove from heat and pour into HOT pint jars; leave 1/4 inch head space; adjust hot lids and process 20 minutes in boiling water bath. Makes about 9 pints. Add to ketchup and I've got peach chili sauce!!
