BUCKWHEAT FLAX BRAN MUFFINS | |
3 cups bran 2 cup buckwheat flour 4 eggs 3/4 cup brown sugar 1/2 cup olive oil or other vegetable oil 1 cup milk or buttermilk 1 cup unsweetened applesauce 3 teaspoons baking powder 1 teaspoon salt 1 cup raisins or Craisins 1 cup chopped nuts Mix ingredients together in large bowl. Make sure the flour is smooth; let sit for 10 minutes. Spoon into greased muffin tins or with cupcake liners. Cook for about 30 minutes at 350°F. Makes 12-15 muffins. Submitted by: Laura R |
